Sweet Potato Casserole

As long as I can remember, my family has enjoyed changing up typical recipes to make them even tastier. Sometimes this means just adding spices or seasoning to a dish; othertimes it means completely reworking a recipe to come up with something entirely new. The following casserole will make your sweet potatoes taste even sweeter.

Sweet Potato Casserole

Ingredients:
3 cups cooked sweet potatoes, 3 or 4 medium size potatoes
1/3 cup stick margarine
3/4 cup sugar
1/2 tsp salt
1/2 cup milk
1 tsp vanilla
2 eggs

Topping

1/3 cup soft stick margarine
1 cup brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans

Directions: Peel and cut sweet potatoes into large cubes and boil in
water till tender. Drain and mash. Add margarine and stir till melted.
Add sugar, salt, milk and egg and stir till well blended. Pour into
buttered or sprayed 9 by 13 pan.

Mix soft margarine with brown sugar and flour. You want this to be
crumbly; a pastry tool works well to mix. Stir in chopped pecans and
sprinkle this topping over sweet potatoes mixture. Bake approximately
40 minutes in a 350 degree oven till potato mixture is set.
